Mostly I share recipes for main courses but today I want to share with you a super simple, tasty, and nutritious side.
I make it a goal to always include at least 2 veggies with every meal. Usually one of those veggies is leafy in the form of a salad or sauteed greens. But the other I try to mix it up with seasonal produce.
An absolute favorite side veggie in my house is Golden Cauliflower. It packs a triple punch. Cauliflower on it’s own is already really good for you. It’s a great source of fiber and cancer fighting phytochemicals. It’s high in antioxidants and anti-inflammatory compounds. It’s also a fabulous source of detoxification supporting chemicals. But when combined with Coconut Oil & Turmeric….it’s a Win-Win-Win!!!
Golden Cauliflower
Serves 4
Ingredients
- 1 head cauliflower florets
- 2 Tbsp coconut oil (or grass-fed butter or ghee)
- 1 Tbsp turmeric (or curry powder)
- 1/2 tsp sea salt
- freshly ground black pepper to taste
Directions
Step 1: In a saute pan, heat oil (or butter) and turmeric on medium high heat.
Step 2: Once hot, add cauliflower and toss to coat with turmeric oil. Let it cook for ~5 minutes, until florets start to brown a bit.
Step 3: Reduce heat to medium-low, add a few tablespoons of water, and cover.
Step 4: Let simmer/cook for another 5-10 minutes, until cauliflower is tender.
Serve warm with any protein of your choice. I have found that it pairs well with just about anything; meat, poultry, fish, or beans. It’s even nice on top of a Nourish Bowl. Give it a try and let me know what you think?!
