This is another family favorite and simple salad we turn to time and again in my house. The bright and zesty flavors make it perfect for summer. The lemon garlic dressing is a quick and easy recipe that you can use with many different salads.

Arugula, also known as Rocket, is a dark leafy green that is a good source of calcium, potassium, folate, vitamin C, and vitamin A. It has a peppery flavor that combines really well with the lemon and garlic in this recipe. Dark leafy greens are an essential component of an anticancer diet. They boost the immune system, support detoxification, lower inflammation, and contain important phytonutrients that help prevent cancer.

Pine nuts provide a touch of protein and healthy fat (along with the olive oil) while the lemon and garlic are two of my favorite anticancer, detox supporting foods. They are both rich in antioxidants plus immune boosting and inflammation lowering phytonutrients.

Lemon Arugula Salad with Pine Nuts

Ingredients

  • 1 large lemon, juiced (~2 Tbsp)
  • 2-3 Tbsp extra-virgin olive oil
  • 1 clove garlic, minced or pressed
  • Pinch of sea salt
  • Freshly ground black pepper
  • 4 cups arugula, washed (~4 ounces)
  • ¼ cup pine nuts
  • Shaved Parmesan (optional)

Directions

Step 1: In a large bowl combine all the ingredients to make the dressing; lemon juice, olive oil, garlic, salt, and pepper. Whisk together with a fork. Taste and adjust ratios if you want it more or less lemony.

Step 2: Add the arugula to the bowl and toss with dressing.

Step 3: Top with pine nuts and Parmesan if you’re adding it.

This is a great salad to serve at a barbecue, picnic, or potluck. It holds up well outside or at room temperature and you can wait to toss until right before serving.
